Blackberry Shrub

"Damn, this is like old timey soda"

Ingredients:

1 cup blackberries
1/2 cup white sugar
1/2 cup apple cider vinegar
1/4 cup distilled white vinegar
1/3 cup water
1 tsp balsamic vinegar
1/2 sprig fresh rosemary
1/2 sprig fresh thyme

Method:

  1. Muddle blackberries and sugar in the bottom of a mason jar.
  2. Mix the rest of ingredients, pop the lid on the jar and shake well to incorporate.
  3. Let steep in the fridge for 2-3 days.
  4. Strain through a fine mesh strainer or cheese cloth. Store in fridge for 1-2 weeks.

To Serve:

Fill a highball glass 2/3 with ice, add 2-3 tbsp of shrub to glass, fill rest of the way with club soda. Top with a squeeze of lemon and 2-3 fresh mint leaves, bruised before adding. Stir and be refreshed.
